Improve data "picker" terminology

Rename terms used in data "picker" elements.

1. Replace word "Picker" to "Selection" (E.g. "Course Picker" window title becomes "Course Selection")
2. Replace word "Checkout" button to "Apply".

These terms are more intuitive, common, and leave the eCommerce experience behind.
